White chocolate and dried cherry oatmeal cookies
These are definitely my new favorite cookie. I'm sorry mom, but they're better than our oatmeal raisin cookies! I know I know, but that's just how I feel. I adapted this recipe from www.bakeorbreak.com. I was looking for a recipe that used white chocolate and dried cherries because that seemed like a good combo, but the original recipe from this site used dark chocolate chunks (which would also be very good). I used 2 cups of oatmeal instead of 3 because 3 seemed like too much. In my opinion, they were absolutely perfect.I discovered the deliciousness of dried cherries through a friend here in Philadelphia. I'm hooked, and always have them in the house. The best price I've found on them is at either Wal-Mart or Aldi. I don't like the taste of the ones from Aldi as much, but I used them in the cookies and they were great.

| Preheat oven to 350°. Beat butter and brown sugar together until smooth. Add eggs one at a time, mixing after each addition. Add vanilla. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the butter mixture just until combined. Do not overmix. Stir in oats, cherries, and chocolate. Drop by tablespoonfuls onto lined or lightly greased baking sheets. Bake for 10 to 12 minutes, or until bottom edges are lightly browned. Cool on pans for a few minutes, then remove to wire racks to cool completely. Makes about 4 dozen cookies. |
These may also be made into bar cookies. Press the dough into a lightly greased 13″x 9″ baking pan. Bake for about 30 minutes.
